Barolo (wine) Braised Short Ribs- 1 lb of Grass-fed organic short ribs (if not available I will substitute with pastured short ribs and increase the weight slightly), pan-roasted then covered with 48-hour stock, dried porcinis, onions, carrots, celery, garlic, tomato, and pancetta. Sauce is then reduced and thickened to a silky gravy.
Organic Milk simmered Potatoes and Parsnips- Organic Yukon gold potatoes and organic parsnips simmered gently in organic whole milk, which captures the starches in the milk solids creating a super creamy mashed duo. Finished with chives.
Belfiori organic Ciliegine- 6 oz. of fresh mozzarella balls with oven dried Roma tomatoes and a garlic, fresh thyme and basil olive oil, fresh herbs finished with MAJD Lebanese fleur de sel. One last nod to another summer left behind.
